Chickpea Kale Sautée


This delicious sautée is a staple basic for busy parents. It’s tasty, with just a hint of spice (you can omit the red pepper flakes if you or your littles don’t like spice) and plenty of protein and nutrients.

  • 4 cloves garlic - minced
    1/2 tsp red pepper flakes
    1 yellow onion - small diced
    2 cups chickpeas - rinsed, drained
    10 oz kale - chopped, stems removed

  • Heat your oil of choice in a large skillet over medium heat. Add minced garlic and red pepper flakes and stir gently. Cook until fragrant, about 30-60 seconds. Add onions and cook to soften, about 2-3 minutes. Add your chickpeas and stir well, distributing the heat. Add salt and pepper as desired. Begin wilting the kale one handful at a time by adding it to the pan, stirring, and letting it soften before adding the next handful. Once the kale is wilted, your dish is finished!

    Serve this on its own or over rice or quinoa. Makes a gratifying in-between meals snack by itself.
